Stir Fried Turkey With Asparagus

1/4 cup chicken broth (or water) 1 tablespoon lemon juice 2 teaspoons cornstarch (use not/starch) 1 teaspoon soy sauce 1/2 teaspoon salt or to taste 3/4 pound asparagus 2 tablespoons vegetable oil 1 lb cooked turkey -- cut 1/2 inch thick -- or boneless chicken breasts or strips 1 clove garlic finely chopped 1 jar slice pimientos (2 oz)
Mix together broth, lemon juice, cornstarch, soy sauce and salt. Cut asparagus into 1-inch pieces. Heat wok or 12-inch skilletover high heat. Add 1 tablespoon oil. Rotate wok to coat sides.
Add turkey and garlic. Stir-fry about 3 minutes. Remove turkey from wok. Add remaining 1 tablespoon oil to wok.Rotate to coat sides.
Add asparagus. Stir-fry about 3 minutes or until crisp-tender. Add pimientos and cornstarch mixture to wok. Cook and stir about 1 minute or until sauce thickens. Stir in turkey. (Fresh, uncooked turkey or chicken may also be used. Just increase cooking time).
Serves 4
