Nutty Asparagus
Recipe Shared by Anne Serving Size: 4
1 lb. asparagus -- fresh 1 tbsp. lemon juice 2 tsps. butter -- melted 2 tbsp. walnuts -- coarsely chopped 1/4 tsp. salt 1/4 tsp. ground pepper -- freshly ground vegetable cooking spray
Snap off rough ends of asparagus, and remove scales with knife if desired. Place asparagus spears in an 8 inch (or so) square or rectangular baking dish, coated with cooking spray. Combine lemon juice and melted butter in small bowl and brush generously over asparagus. Sprinkle nuts, salt and pepper over asparagus. Bake uncovered, at 350 for 20 to 25 minutes, or until asparagus is tender. Goes great with the parmasan chicken, or any other main dish!!!
