Low Carb Shepherd's Pie

3 slices bacon 2 pounds ground beef 1 green bell pepper 1 small onion 1 pound mushrooms -- sliced 1 can beef stock -- or mushroom stock 1 shot brandy xanthum gum salt and pepper
Cook the bacon, remove and drain.
Seed the pepper and peel the onion, then chop finely in a food processor.
Saute the ground beef, onions, and green Pepper in the bacon grease. When the beef is mostly browned, add the mushrooms and continue to cook, stirring and breaking up the large chunks of beef to brown evenly.
Add the broth and brandy and bring to a strong simmer.
Sprinkle on xanthum gum, stir, and repeat as necessary to achieve the desired consistency. It should be thick like a stew or hearty gravy. Add salt and pepper to taste.
