Green Beans like Diane's mother used to make
Recipe By Beth Serving Size: 6
2 cans green beans, cut 3 tablespoons olive oil 2 tablespoons garlic, crushed 2 green onions, chopped small 2 slices ham, cut into julienne strips 1/2 tomato, chopped small salt and pepper
Heat the oil and sauté the garlic and the onions until the garlic starts to brown. Add the ham, stir well, and cook until the ham starts to brown. Add the tomato, stir well, and continue cooking until the tomato softens and wilts. Taste for needed salt and pepper. Add the green beans and mix well, using a slotted spoon (this keeps the beans from breaking up). Cover the pan and cook for 2-3 minutes, then mix again. Continue heating and mixing for up to 5 minutes. When the beans are hot and shiny from being well coated with the sauce, use the slotted spoon to transfer them to a serving dish or to dinner plates, leaving behind any water accumulation in the bottom of the pan.
