Sparkling Lemon Ice Tamara's Blueberry Lemonade

Amount Measure Ingredient -- Preparation Method
1 small package sugar free lemon Jell-O 1 cup boiling water 1 cup sugar free lemon seltzer or diet soda 3 tablespoons fresh lemon juice 1/2 teaspoon grated lemon peel
Completely dissolve the gelatin in the boiling water. Add the seltzer or soda, lemon juice, and lemon peel. Pour into an 8 or 9- inch square pan. Cover. Freeze until firm, about 3 hours. Remove from the freezer; let stand at room temperature for 10 minutes to soften slightly. Beat with an electric mixer at medium speed or process in a blender or food processor until smooth. Spoon or scoop into individual dishes and serve immediately. Serves 6 @ 8 calories, 0 grams fat, 1 gram protein, and 1 gram carbohydrate.

1 cup fresh or frozen blueberries 2 lemons 6 packets Splenda crushed ice
In a quart jar, combine blueberries, juice of two lemons, Splenda, about a cup of crushed ice, and add enough water to cover ice. Blend till nearly smooth with hand blender. Fill jar with cold water to nearly full. Give it one more whirl, just enough to blend. Pour over ice in 16-oz glasses and serve with a straw. Total Carbs: 23.5 Divided by 3: 7.8 So refreshingly delicious... a real summertime treat! You could make this with any berry, but the taste combination of blueberries and lemon was surprisingly wonderful. Six packets of Splenda was just right... not too sweet, but enough to take the edge off the lemons. Obviously, this is not for Induction level, and even for some on OWL, a little high depending on your ccl... but if you can afford the carbs, this recipe is packed with vitamins!
