Asparagus snack
Recipe By: Deborah Kuhnen Serving Size: 1
1 asparagus spear 1 slice salami 1 drop mayonnaise
One of my favorite snacks is Asparagus rolled in spicy salami with garlic mayonnaise. I take about 1/2 cup of mayo and mix it with 2 minced cloves of fresh garlic. I leave this in the fridge overnight to allow the flavors to meld. I also blanch a bunch of asparagus (with the woody stems broken off) and then plunge them into cold water. Then I dry them very well and refrigerate until the next day (this can be done on the day you assemble them if you prefer). On the day I'm assembling, I just take a slice of spicy salami (I prefer to use the longer, oval shaped slices of salami as there's more to roll), spread it thinly with the garlic mayo. and place one asparagus spear at the end. Then all you have to do is roll them up. I've served this as a snack for the family, taken it to pot lucks and even as hors d'eouvres at a fancy wine and cheese party. It always goes over well and I'm always asked for the recipe by many people. You can even buy garlic mayonnaise (aioli) at most grocery stores if you want to skip that step.
